The flavours of San Sebastián feature across lunch and five-course tasting menus at Michelin-starred Ametsa with Arzak Instruction. On the lunch menu, dishes include starters such as Ibérico ham on a bread pillow or scallops. For the main course, diners get the option of dishes such as sea bass with celery illusion or suckling pig on carob crumbs. Meals can conclude with a sweet treat such as orange French toast or clove custard with toasted milk and pineapple ice cream. The meal can be supplemented with a glass of Cava.

Alternatively, the tasting menu comprises five courses with sherry flight, and can be taken at lunchtime or in the evening. For the first course, diners begin with sunflowers seeds cracker with duck and onion rock with marinated anchovie. The second course presents egg with chistorra and crumbs, followed by a fish course of rocky cod.
